Hand-harvested, totally de-stemmed. Cold pre-fermentation maceration for 48 hours, natural fermentation using indigenous yeasts, alcoholic and malolactic fermentations carried out entirely in stainless steel vats, aged for 8 months.Wine certified for High Environmental Value (HVE) Level III viticulture.
