Wine:

Originating from 1.86 ha located in the extension of the Combe d'Orveau, the 2021 Red Clos de Vougeot Grand Cru is born from a fantastic climate that many envy. It's a top-class Pinot Noir, offering distinction with aromas of red fruits, morello cherry, cocoa powder, dried flowers, and bramble. The palate is elegant, very relaxed, with a remarkable and delicate profile, accompanied by a beautiful touch of tannins. A wine that is deep and full of character. Rated 97/100 by the Selection Committee.

Vinification:

Hand-harvested, 100% destemmed. Cold pre-fermentation maceration in stainless-steel vats for around 6 days, followed by alcoholic fermentation using only indigenous yeasts, with daily pumping-over and temperature and density controls. Very little punching of the cap is carried out, the number depending on the context of the vintage. Vatting time averages 20 days. Malolactic fermentation and ageing in oak barrels, 30% of which are new and the rest aged for 1, 2 and 3 wines. Aged for 15 months, then racked to stainless steel tanks for 2 to 3 months. Wine neither fined nor filtered before bottling.
Vines aged 60 years and over on 1.87 ha.

Powdery, infused, beautiful aromas of red berries, morello cherry, cocoa powder, dried flowers and bramble.

Palate:

Elegant and relaxed, deep and full-bodied with perfectly ripe fruit, this cuvée reveals a remarkable, delicate profile accompanied by a beautiful touch of tannin. A Pinot of great class!

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Red meats and game, tournedos Rossini, jugged hare à la royale, venison noisette with pepper sauce, dishes cooked with red wine, aged Saint-Nectaire fermier cheese.
