Rich and beautifully long-lasting, the 2018 Red Échezeaux Grand Cru unveils layers of refined black fruit flavors complemented by hints of delicate spices. Crafted from old vines over 50 years of age, rooted in clay-limestone soils, this wine is produced in very limited quantities and promises excellent aging potential. Perfect for a special occasion, it pairs beautifully with slow-cooked meats or game dishes.

Vinification:

Hand harvested. Plot of 66 ares 10. Cold pre-fermentation maceration, slow fermentation with punching down of the cap at the start of fermentation. Aged in oak barrels for 12 to 15 months, 50% of which are new, then in stainless steel vats for 6 months.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Veal sweetbreads and forgotten vegetables, thick sautéed veal chop and fricassee of chanterelles, game dishes.

Cellar aging:

From now until 2032, and even longer for enthusiasts.
