The 2022 red Burgundy Hautes Côtes de Beaune Pinot Noir perfectly expresses ripe Pinot, with beautiful morello cherry and black cherry notes on the nose. The palate is supple, dense, and intensely fruity, supported by a restrained aging process that makes it accessible today. Enjoy with charcuterie, grilled meats or roast poultry. Hand-harvested, cold pre-fermentation maceration under bio-protective cover (non-Saccharomyces Torulaspora Delbrueckii and Metschnikowia Pulcherrima yeasts) for 6 days.Maceration for 12 days in concrete vats, with light punching of the cap and sustained daily pumping-over.
Aged in stainless steel vats for 8 months.
