Wine:

Smooth and elegant, the 2022 red Saint-Romain offers a fresh and fruity juice, backed by meticulous winemaking where the new oak remains subtle (no more than 15%). It's a benchmark example, a perfect juicy Pinot that's alluring and balanced, with great intensity. Notes of licorice and black fruits are supported by a silky texture, with round and delicate tannins.

Vinification:

Manual harvesting. 100% of the grapes are destemmed. The maceration process lasts 12 to 15 days with temperature control, daily pumping over and punching down. Pneumatic pressing is used. The wine is then aged for 12 months in oak barrels, of which 15% are new.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Herb-crusted prime rib, oven-baked lamb shoulder, saffron-flavored veal navarin, roast pigeon with sage crapaudine.

From now until 2029.
