Wine:

The 2020 White Ajaccio Chioso Novo, made from old vines of Vermentino fermented in wood and enhanced by the mineral quality of granite, demonstrates an exceptional mastery of both vinification and aging. This white wine boasts a broad aromatic range, marked by touches of citrus and white fruits, with a simplicity and accuracy of flavors that carry through to a delightfully crisp finish. It's a standout wine, with an extraordinary persistence that ranks it among the top of its kind on the island. Rated 94/100 by RVF.

Vinification:

Hand-harvested. Parcel selection of old vines planted in 1964, grafted with Vermentinu in 2017. Vinification and ageing for 12 months on lees in foudres and demi-muids, followed by 7 months of mass ageing in stainless steel tanks. Production of 2,886 bottles.

Certified organic wine.

Temperature:

Serve between 10 and 12°C in a large glass.

Seafood, langoustine ravioli, sea bass simply grilled with fennel and lemon olive oil, monkfish curry.
