Wine:

A blend of Chardonnay (80%) and Savagnin aged under a veil for three years, the 2018 white Côtes du Jura Tradition is an oxidative white wine of great finesse. It's a charming wine with a graceful core, offering notes of white fruits, honey, and almond. The smooth and deep texture, the discreet and well-balanced oxidation, and the subtle finish make it a little Jura gem, best served around 15°C with young Comté cheese, vol-au-vent, or delicately spiced Asian dishes.

Vinification:

Harvested by hand. Alcoholic and malolactic fermentations in vats. Aged for 3 years in oak barrels, under natural yeast veil.

The estate began its conversion to organic farming in 2015 and achieved full organic certification with the 2019 vintage.

Bright golden yellow.

Nose:

White fruit aromas punctuated by notes of almond and honey.

Palate:

Deep and suave with delicate fruit, this cuvée with its oxidative profile releases a juice with discreet, well-balanced oxidation.

Temperature:

Serve between 14 and 16°C.

Laurent Macle and his sister Christelle continue their father's work with devotion. The 12 hectares entirely devoted to Château-Chalon serve the cause of judiciously managed oxidation, without ever overdoing it. In recent vintages, "ouillés" wines (without oxidative style) have also appeared, of a comparable level of excellence. These are mythical and legendary wines, built for eternity, which remain difficult to access due to limited volumes.
