Vinification:

Hand-harvested. Parcel selection of old vines planted in 1967, grafted with Vermentinu in 2018. Vinification and ageing for 12 months on lees in foudres and demi-muids, followed by 7 months of mass ageing in stainless steel tanks. Production of 3,052 bottles.

Certified organic wine.

Temperature:

Serve between 10 and 12°C in a large glass.

Seafood, line-caught sea bass simply grilled with fennel and lemon olive oil, turbot fillet with butter sauce.
