Wine:

Blending Grenache Blanc and Grenache Gris, the 2021 white IGP Côtes Catalanes Coume Gineste opens with an exceptionally mineral expression, featuring notes of flint and magnificent purity. The palate is straight, linear, incisive, and precise, with immense length. It is both flavorful and highly digestible, with a saline touch. This fresh and sharp vintage is set to join the ranks of the great Coume Gineste vintages and will age well. It's perfect to pair with seafood, sea urchins, or slightly fatty fish. Rated 97/100 by RVF.

Vinification:

Hand harvested in crates. Direct pressing with light settling. Aged for 12 months, 50% in new barrels and 50% in one-wine barrels.

Light yellow with bright green highlights.

Nose:

Fresh and marked by floral aromas and a delicate mineral aspect underlined by a touch of gunflint.

Palate:

An exceptional expression of minerality in this wine, with its digestible, sapid, fresh structure and delicately saline finish.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Sea urchins, salmon en papillote and lemon, goat's or ewe's milk cheeses.
