Wine:

A true cellar-worthy wine, the 2019 red Terrasses du Larzac Les Combariolles belongs to the elite of great red wines from the south. Originating from its namesake terroir, it offers an abundance of black fruits and spices within a still compact, sap-filled structure where tension and length find equilibrium. The most patient wine enthusiasts will be rewarded, as this wine brilliantly expresses the tension of the limestone pebbles and the vitality of this terroir.

Vinification:

Harvested by hand. Aged by plot for 12 months in demi-muids and oval tuns, then blended and aged for a further 7 months in stainless-steel vats.

Certified organic wine.

Temperature:

Decant an hour before serving, between 14 and 16°C, in a large glass.

Food and wine pairing:

Leg of lamb with pan-fried chanterelles, wild duck with celery and truffles, filet mignon with local ceps, veal confit in goose fat.

Cellar aging:

From now until 2032, and beyond for enthusiasts.
