Wine:

An excellent wine for aging, the 2019 red Terrasses du Larzac Les Combariolles is part of the elite of great red wines from the south of France. Coming from its namesake terroir, it offers a profusion of black fruits and spices in a succulent, still compact material where tension and length are balanced. The most patient wine enthusiasts will be rewarded because this wine brilliantly expresses the tension of limestone pebbles and the vitality of the terroir. In Magnum format, conviviality is at its peak, and the pleasure is multiplied!

Vinification:

Harvested by hand. Aged by plot for 12 months in demi-muids and oval tuns, then blended and aged for a further 7 months in stainless-steel vats.

Certified organic wine.

Temperature:

Decant an hour before serving, between 14 and 16°C, in a large glass.

Food and wine pairing:

Leg of lamb with pan-fried chanterelles, wild duck with celery and truffles, filet mignon with local ceps, veal confit in goose fat.
