Wine:

From the terroir that bears its name, the 2022 red Terrasses du Larzac Les Combariolles blends Syrah, Mourvèdre, Carignan, Grenache and Cinsault in a beautiful profusion of flavours. The wine is dense, rich and full-bodied, with a lovely freshness and a few hints of liquorice. It is a highly concentrated wine that promises long, fine aging.

Vinification:

Hand harvested. Plot-based wine matured for 12 months in demi-muids and oval tuns, then blended and aged for a further 4 months in stainless steel vats.

Certified organic wine.

Temperature:

Decant one hour before serving at between 14 and 16°C in a large glass.

Food and wine pairing:

Rib of beef with green pepper sauce, saddle of lamb confit with garlic and rosemary, pan-fried duck breast.

Cellar aging:

From now until 2035, and beyond for enthusiasts.
