Domaine Daniel Crochet - Sancerre - Rouge - 2021

Wine:

The 2021 Red Sancerre opens with elegance and medium body, displaying a clear expression of Pinot Noir. It's a finely crafted wine, with a cool concentration that makes it very appealing. It's best enjoyed within three to four years. Please note that quantities are more limited for this vintage.

Vinification:

Hand-picked. Total or partial destemming depending on the vintage. Cold maceration for 6 to 14 days before fermentation with indigenous yeasts, regular pumping over and light punching of the cap. Vatting time of 18 to 30 days. Aged for 12 months, 60% in barrels and 40% in wooden vats, followed by 6 months in concrete vats. Bottled on the estate by the domaine.

Color:

An intense, brilliant red with violet highlights.

Nose:

Delicate aromas of tart raspberry candy.

Palate:

Elegant and medium-bodied, this cuvée offers frank, precise juice with a cool concentration that makes it very appetizing.

Temperature:

Serve between 14 and 16°C.

Food and wine pairing:

Grilled flank steak, rack of veal au jus, oven-roasted guinea fowl.

Cellar aging:

From now until 2027.

Recognized by the RFV Guide, Daniel Crochet is now one of the leading figures in Sancerre. And for good reason: talented and well-rounded, he benefits from the finest plots in the Bué area and dedicates tremendous effort both in the vineyard and in the cellar. He excels equally well with his Pinot Noir as with his Sauvignon cuvées.

Each one is a perfect model of its terroir's expression, and the progress in recent vintages is impressive, with a conversion of the vineyard to organic practices.
