Wine:

A Selection Committee Favorite, rated 93/100, the 2021 White IGP Collines Rhodaniennes La Combe Pilate takes full advantage of this fresh and chiseled vintage, developing a delicate and refined nose. Notes of white flowers and fresh fruit are present in a fresh and aromatic palate, with a nice balance between tension and a certain amplitude.  In a blind tasting, after having been decanted, this wine could compete with many Condrieu wines!

Vinification:

Hand harvested, fermented and matured in demi-muids of one to several wines for 8 to 9 months. Malolactic fermentation carried out. Very light stirring of the lees during the first months of aging.

Organic and biodynamic wine certified Demeter.

Color:

Bright pale gold.

Nose:

Fragrances of white flowers and fresh fruits.

Palate:

Generous and tense, this wine with a fresh and delicate profile releases a complex palate full of fruity flavors.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Wok of monkfish with green curry and crispy vegetables, sautéed shrimps, salmon rillettes.

Cellar aging:

From now until 2026.
