Wine:
The Cuvée n°21 is an example of a successful white maceration wine. A maceration wine, usually called vin orange, is the result of maceration of grape juice with skins, seeds and sometimes stalks for a few days to several weeks, or even months. As the tannins build up, the wine takes on an orange color.This wine is a perfect demonstration of this, as our sommeliers are convinced! On tasting, the wine's complexity, toasted bread and apricot aromas and delicate tannins give it a pleasant structure. The finish, reminiscent of marmalade and citrus zest, gives the final note and will leave a magical memory of this atypical wine!
Vinification:
Hand harvested. Orange wine from maceration of a blend of 2019 (17%) and 2021 (83%) vintages. Aged 59% in foudres and 41% in demi-muids.Certified organic wine.

Some delicate tannins give it a very pleasant structure, with a finish reminiscent of marmalade and citrus zest.
Temperature:
Avoid serving too cold, as this brings out the tannins. So, like a white wine, but not below 10°C, which will quickly make 12°C in the glass.Food and wine pairing:

At first, his English importer (also importer of Romanée Conti, Rayas...) wanted to make an easy, friendly wine... Gérard Gauby soon unveiled the Fenouillèdes terroir, and Domaine Le Soula became one of the region's must-visit addresses!
Trained at the finest estates in South Africa and the United States, Wendy Wilson took over the reins of the estate team in 2016 and its 22 hectares of vines, which have been farmed organically since the beginning, and biodynamically since 2008.
