Wine:

The 2019 red Côtes du Roussillon Villages Latour de France Occultum Lapidem is yet another standout success. Its intense aromas of macerated fruit, complemented by subtle oak aging, create a perfect expression of a southern wine with a well-balanced Mediterranean character. The ripe, concentrated juice is framed by fine yet structured tannins, with Grenache bringing depth and Carignan adding a fresh, lifted edge. A beautiful bottle to enjoy now with coq au vin or a Provençal daube, or to cellar for a few more years.

Vinification:

Hand harvested and totally destemmed, maceration for 4 weeks, regular punching of the cap, 50% of the harvest is matured in concrete vats.

Organic wine, certified.

Color:

Intense red with some vermilion reflections.

Nose:

Ripe with a very Mediterranean solar profile with notes of macerated fruit

Palate:

The aromas are confirmed in the palate with a very ripe taste supported by fine but present tannins.

Temperature:

Serve between 16 and 18°C.

Leg of venison, coq au vin, grilled lamb chops with herbs.
