Wine:

À dominante de grenache gris, Chrysopée 2019 est un grand blanc de Méditerranée. Très intense, presque doré, il offre dès le premier coup d’œil la hauteur de ses ambitions. Car c’est un vin à vocation gastronomique, au fruit charnu, mûr et frais, qui reprend en bouche ces attributs de consistance, avec une fraîcheur, une vibration et une salinité imparables. Un superbe blanc de Méditerranée, à savourer ou à garder encore quelques années.

Vinification:

Hand harvested in the morning in crates, whole grapes pressed, lightly settled at 12°C for 24 hours, aged in 6-month demi-muids with stirring on the lees for the first 2 months.

Color:

Golden yellow with good intensity.

Nose:

A beautiful aromatic profile marked by notes of ripe stone fruits like apricot and peach, complemented by floral undertones.

Palate:

This wine is fresh, with a lovely minerality and salinity, and a long, delicate palate.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Creamy cockle risotto, cod with chorizo, zarzuela, grilled fish.
