Wine:

The 2022 Caubeigt cuvée is simply dazzling. Once again, the maestro has hit the perfect tempo, and we are captivated by this sweet wine's exquisite freshness. Fresh, pure, and complex, it offers beautiful scents of pineapple and dried apricot, with a hint of vanilla and subtle floral touches. The palate combines freshness and energy in great harmony, with a pleasing light saline note. The perfectly integrated aging supports it effectively, highlighting its dynamism, depth, and elegance. Although it has great potential, this crystalline wine is already perfect for an aperitif or with a meal, pairing well with endive salad with Roquefort, foie gras terrine, or tarte tatin; it can even stand alone. Rated 96-97/100 by the Committee.

Vinification:

Hand-picked in early November. Slow whole bunch pressing. Vinification with indigenous yeasts. Aged on fine lees for 10 months, then 2 months in stainless steel tanks.

Bright golden yellow with gold highlights.

Nose:

Magnificent Victoria pineapple aromas underlined by a hint of dried apricot, vanilla and floral notes.

Palate:

Dynamic and elegant, this cuvée, with its perfect balance of acidity and sweetness, reveals a wine of incredible depth, with perfectly integrated ageing and magnificent energy in its lingering length.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

As an aperitif, this Jurançon stands on its own, with endive salad with Roquefort, foie gras terrine, tarte tatin, roasted pineapple and vanilla ice cream quenelle.

Franck Lihour, a master winemaker in Jurançon, has truly distinguished Domaine Castéra with his exemplary approach. Drawing inspiration from the finest Champagne houses, he employs meticulous pressing techniques, uses indigenous yeasts for fermentation with minimal sulfur, and opts for aging in wooden barrels and sandstone eggs. This thoughtful process results in Jurançon wines of exceptional expression and luminous tension.

With a background that includes stints at the iconic Clos Joliette and Burgundy and Château Suduiraut in Sauternes, Lihour has amassed a wealth of expertise from the wine world's finest. Esteemed by Olivier Poussier as one of the most gifted winemakers of his generation, he has propelled Castéra to the forefront of the most exciting wineries to watch.
