Wine:

The 2007 Corton-Charlemagne Grand Cru White showcases intense minerality, remarkable tension, and refined depth. It unfolds with precision and freshness, revealing subtle notes of citrus zest, white flowers, and crushed stone. The palate is finely chiseled, with a beautifully balanced structure and a long, clean finish marked by elegant bitterness. This is a wine of exceptional purity and class, embodying the timeless character of its terroir. Rated 95/100 by the RVF Guide.

Vinification:

Manual harvest. Light crushing, gentle pressing, settling, fermentation in oak barrels, followed by meticulous monitoring of the barrels until the first racking. Blending of the wines and aging on fine lees in tanks during a second winter. Second racking to separate from the lees, then bulk storage. Bottling after two months for homogenization. Aging in bottles in the estate's cellars for several months or sometimes a few years.

Since 1997, the estate has gradually shifted towards organic farming. After initial biodynamic trials on a third of the vineyards starting in 2004, the estate began its full biodynamic conversion in 2011. The estate has been certified in biodynamic viticulture by Demeter since 2013.

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Grilled lobster, sweetbread cassolette, poularde à la crème, Arctic char with acacia honey cream sauce, Saint-Pierre with vanilla oil.

Cellar aging:

From now until 2027, and even longer for enthusiasts.

Ideally located in Corton, at the heart of the prestigious Charlemagne climat, Domaine Bonneau du Martray is a true emblem of Burgundy. Awarded 2 stars in the RVF Guide, this legendary estate is now under the ownership of Stanley Kroenke, proprietor of California's iconic Screaming Eagle. Committed to excellence, the domaine produces only two cuvées: a Corton and a Corton-Charlemagne.

Spanning 7 hectares, the vineyard is farmed biodynamically with meticulous parcel-by-parcel care. Extended barrel aging allows these wines to develop the structure and depth required for long-term cellaring. The result is a collection of wines with remarkable finesse, longevity, and distinction.
