Wine:

Freshly bottled in January and previewed by our Committee, the 2017 white Côtes du Jura Vin Jaune comes from a year marked by frost, significantly reducing yields. This makes it a collector's item in more ways than one, as Vin Jaune production is already limited, accounting for about 4% of Jura's output. With only 37 barrels produced, this 2017 vintage is a rare find. It's a powerful wine that benefits from ample decanting. The aromatics are intense, yet the oxidation is skillfully restrained, adding a layer of finesse. The iconic Vin Jaune flavor, with hints of walnuts and dried porcini, seems destined to last forever, leading into a palate remarkable for its breadth and strength. Already, when properly decanted, it can stand up to a 24 or 36-month aged Comté cheese (avoid overly floral Comté, which might struggle to complement the wine). With a potential to age 30 years or more, this wine has earned a 96/100 rating from our Committee.

Vinification:

Hand-harvested, indigenous yeasts, aged for 6 years in oak barrels in dry cellars (centuries-old cellars with basements and natural stones).

Decant an hour before serving, between 18 and 20°C.
