Wine:

On this perfectly preserved and now mature vintage, the 2014 red nTerrasses du Larzac Les Combariolles delivers a condensed expression of the excellence of its terroir, sourced from an incredibly precise selection of limestone pebble parcels. Its silky tannins, superb persistence, and overall sensuality are particularly noteworthy. This is a great wine driven by the freshness of the vintage and a significant proportion of Syrah (50%), complemented by Mourvèdre, Carignan, and Grenache. It can still be enjoyed for another 5 years and beyond for enthusiasts. Rated 95/100 by Bettane+Desseauve.

Vinification:

Harvested by hand. Aged by plot for 12 months in demi-muids and oval tuns, then blended and aged for a further 7 months in stainless steel vats.

Temperature:

Serve between 14 and 16°C in a large glass.

Leg of lamb with pan-fried chanterelles, wild duck with celery and truffles, filet mignon with local ceps, veal confit in goose fat.
