Domaine du Bouchot - Pouilly-Fumé - Caillottes - Blanc - 2022

Wine:

The 2022 white Pouilly-Fumé Caillottes is an extremely pure and sensitive Sauvignon, marked from the opening by wisteria notes and great freshness. The structure continues with the same straightforward, digestible, very delicate profile, based on citrus and white fruit flavors. This is a very refined white, with no woody aspect, very thirst-quenching, to be served with oily fish, a nice salmon steak simply grilled, for example.

Vinification:

Vendanges manuelles, vignes âgées en moyenne de 35 à 40 ans. Vinification sans ajout de SO2. Fermentation en levures indigènes. Élevage en cuves inox 60%, en fûts cigars 30% et en œufs béton 10%.

Vin Biologique et Biodynamique, certifié.

Color:

Bright pale yellow with green highlights.

Nose:

A very pure nose with hints of wisteria expressing great freshness.

Palate:

This wine is very refined, with no oaky aspect and citrus flavors. A wine with a straightforward, thirst-quenching profile!

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Salmon steak, roasted or marinated white fish, prawn risotto.
