Wine:
Comprised of 80% Petit Manseng from young vines and aged in sandstone jars, the 2022 white Jurançon Sec Costa Blanca reveals fine limestone minerality and a pronounced saline touch. This complex wine, with notes of citrus, white fruits, and peach, offers a broad and exotic texture, particularly rich and tense. A serene blend of power and freshness, it pairs wonderfully with monkfish wrapped in cured ham or aged goat cheeses.Vinification:
Hand harvested mid-October 2022. Vinification without de-stemming, direct pressing, indigenous yeast fermentation in temperature-controlled 1200-liter tuns, malolactic fermentation carried out. Aged 12 months on lees in 1200-liter stoneware jars. Production of 1800 bottles. Residual sugar: 2 g/l (Dry).Certified organic wine.
